Ingredients:
For the Pooris:
- 2 cups whole wheat flour
- 2 raw potatoes, grated
- 1 large onion, finely chopped
- 4-5 garlic cloves, finely chopped
- 1 inch ginger, finely chopped
- 2-3 green chilies, finely chopped
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon cumin powder
- 1/4 teaspoon Kashmiri red chili powder
- 1/4 teaspoon carom seeds
- Salt to taste
- 1/4 cup dried fenugreek leaves
- 1/4 cup chopped coriander leaves
- 1/4 cup semolina
- Oil for frying
For the Onion Parathas:
- 1/2 cup whole wheat flour
- 1/2 onion, finely chopped
- 1 green chili, finely chopped
- 1/4 teaspoon coriander powder
- 1/4 teaspoon red chili powder
- Salt to taste
- Oil for frying
Instructions:
Pooris:
- In a bowl, combine the whole wheat flour, grated potatoes, onion, garlic, ginger, green chilies, turmeric powder, coriander powder, cumin powder, Kashmiri red chili powder, carom seeds, salt, dried fenugreek leaves, and chopped coriander leaves.
- Gradually add water and knead into a soft dough.
- Cover the dough and let it rest for 10-15 minutes.
- Divide the dough into equal portions and roll them into round poori shapes.
- Heat oil in a pan and fry the pooris until golden brown.
- Place the pooris on a paper towel to remove excess oil.
Onion Parathas:
- In a bowl, combine the whole wheat flour, chopped onion, green chili, coriander powder, red chili powder, and salt.
- Gradually add water and knead into a soft dough.
- Cover the dough and let it rest for 10-15 minutes.
- Divide the dough into equal portions and roll them into round paratha shapes.
- Heat a griddle and cook the parathas on both sides until golden brown.
- Serve the parathas hot with chutney or yogurt.
Tips:
- You can adjust the amount of spices in the pooris and parathas according to your preference.
- To make the pooris even crispier, you can add a little bit of semolina to them before frying.
