Today, I am going to share with you a very tasty and simple recipe – Lauki Kofta. This recipe is as easy to make as it is delicious to eat. So, let’s get started and learn how to make Lauki Kofta.

Ingredients:

  • One medium-sized bottle gourd (lauki)
  • One teaspoon turmeric powder
  • Quarter teaspoon Kashmiri red chili powder
  • Quarter teaspoon garam masala
  • Salt to taste
  • One teaspoon garlic paste
  • One cup gram flour (besan)
  • Oil for frying
  • Two medium-sized onions, finely chopped
  • One teaspoon ginger-garlic paste
  • Two medium-sized tomatoes, pureed
  • Half teaspoon dried fenugreek leaves (kasuri methi)
  • Finely chopped coriander leaves

Method:

  1. Prepare the Bottle Gourd:
  • First, take a medium-sized bottle gourd. Peel it well and clean it with water.
  • Now grate the bottle gourd finely. Squeeze out the water from the grated bottle gourd. Take it in your hand and squeeze the water out, then put it in a bowl.

Prepare the Kofta Mixture:

  • Add one teaspoon turmeric powder, quarter teaspoon Kashmiri red chili powder, quarter teaspoon garam masala, salt to taste, one teaspoon garlic paste, and one cup gram flour to the grated bottle gourd.
  • Mix everything well with your hands.
  1. Make the Koftas:
  • Make small balls from the mixture and fry them in hot oil until golden brown. Remove the fried koftas and set them aside.
  1. Prepare the Gravy:
  • Remove half of the oil from the pan and set it aside. In the remaining oil, add finely chopped onions and fry until golden brown.
  • Add one teaspoon ginger-garlic paste and fry for one to one and a half minutes.
  • Now add half teaspoon turmeric powder (optional), half teaspoon coriander powder, half teaspoon garam masala, and half a glass of water. Mix and cook on medium flame for 5 minutes.
  • Add the pureed tomatoes and cook for another 5 minutes.
  1. Combine Koftas and Gravy:
  • Add half teaspoon dried fenugreek leaves and water as needed to the gravy. Boil on high flame.
  • Add the fried koftas and finely chopped coriander leaves.
  1. Serve:
  • Lauki Kofta is ready to be served. Serve it in a plate or bowl.
