Today, I will be making almond milk. For this, I have taken:
Ingredients:
- 1 liter milk (you can use toned or full cream milk)
- 20-25 almonds (soaked overnight and peeled)
- 1/2 cup sugar
- 2 small cardamom pods (ground)
- A pinch of yellow food color
- 1 tablespoon cornflour (you can also use custard powder)
Method:
- Boiling the Milk:
- Turn on the stove and place a kadhai or pan on it. Pour the milk into the pan and bring it to a boil.
- While the milk is heating, prepare the other ingredients.
- Making Almond Paste:
- Take the soaked and peeled almonds and put them into a mixer jar.
- Add a little milk and blend it into a very fine paste.
- Transfer the almond paste to a small bowl and set aside.
- Preparing Cornflour Mixture:
- In a small bowl, take 1 tablespoon of cornflour.
- Add a little milk and mix well to avoid lumps. Set aside.
- Preparing Food Color:
- Take a pinch of yellow food color in a small bowl.
- Add a little milk and mix well. Set aside.
- Combining Everything:
- Once the milk in the pan comes to a boil, mix it well.
- Add sugar and cardamom powder to the boiling milk.
- Add the prepared almond paste to the milk and mix thoroughly.
- Cook on low flame for 5 minutes, stirring occasionally.
- Adding Cornflour Mixture:
- Add the cornflour mixture to the milk and mix well.
- Add the food color mixture and mix again.
- Continue to cook on low flame for another 5 minutes, stirring constantly to prevent lumps.
- Finishing Touches:
- After 5 minutes, the almond milk should have thickened nicely.
- Turn off the stove and let it cool slightly.
- Serving:
- You can serve the almond milk warm or chilled.
- For chilled almond milk, refrigerate it before serving.
- Garnish with finely chopped almonds on top.
