Today, I’m going to make Chana Dal Paratha. To make this, I’ve taken one cup of chana dal. First, we will thoroughly clean the chana dal with water. After that, we will strain it.
- Put the chana dal in a bowl and clean it with water, then strain out the excess water.
- Take a pressure cooker and add the chana dal to it.
- Add one glass of water (not too much water).
- Add a pinch of turmeric powder.
- Close the lid of the pressure cooker and place it on high heat. Cook until it gives one whistle, then turn off the heat.
- Wait for the pressure to release naturally before opening the lid.
- Strain the cooked chana dal using a sieve and let it cool down completely.
While the dal is cooling, prepare the dough:
- In a large bowl, take approximately 500 grams of wheat flour.
- Add half a teaspoon of salt, half a teaspoon of carom seeds (ajwain), and two teaspoons of refined oil.
- Mix everything well with your hands for about one to one and a half minutes.
- Gradually add water to form a smooth dough similar to the consistency for making rotis or parathas.
- Cover the dough and let it rest for 5-7 minutes.
By this time, the chana dal would have cooled down.
- Transfer the dal to a mixer jar and grind it to make a powder.
- Put the ground dal in a large bowl and add half a teaspoon of salt and half a teaspoon of red chili powder. Mix well.
- Optionally, you can add finely chopped green coriander and green chilies.
To make the parathas:
- Divide the dough into equal portions and form small balls.
- Roll out each ball slightly and add a spoonful of the dal mixture into the center.
- Seal the edges and flatten the stuffed dough balls.
- Dust with a little dry flour and gently roll them out into parathas, ensuring they are not too thick or too thin.
- Heat a pan on medium heat. Once hot, place a paratha on it.
- Cook for about 30 seconds on one side, then flip and cook the other side for another 30 seconds.
- Apply a little refined oil on one side, flip again, and press gently with a spatula to ensure it cooks evenly.
- Repeat the process until both sides are golden brown and cooked well.
- Remove the paratha from the pan and place it on a plate.
Your Chana Dal Paratha is ready to serve.
