- Preparation:
- Soak black chana (black chickpeas) overnight. I soaked them overnight.
- Now, take a large pressure cooker and add the soaked black chana.
- Add two glasses of water.
- Add 1/4 teaspoon salt.
- Close the pressure cooker lid.
- Cooking:
- Cook on high flame until you get one whistle.
- Reduce to low flame and cook for another whistle.
- Turn off the gas and let the pressure release naturally.
- Making the Spice Mix:
- While the pressure is releasing, prepare the spices.
- In a small bowl, take:
- 1 teaspoon coriander powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon Kashmiri red chili powder
- 1 teaspoon garam masala
- 1 teaspoon chaat masala
- 1 teaspoon salt (I am using a very small spoon)
- 1/2 teaspoon roasted cumin powder
- Mix the spices well and set aside.
- Frying the Chana:
- Once the chana is cooked, drain and transfer them to a bowl.
- In a pan, heat 2 tablespoons of any cooking oil.
- Add the prepared spice mix to the hot oil and fry for 2-3 minutes on medium flame.
- Add the boiled black chana and mix well.
- Cook for about 4 minutes, ensuring the spices coat the chana thoroughly.
- Turn off the gas and transfer the chana to a large bowl.
- Preparing the Chaat:
- Finely chop half a cucumber, half an onion, one tomato, and one boiled potato.
- Add these chopped vegetables to the chana in the bowl.
- Squeeze the juice of one lemon over the mixture.
- Optionally, finely chop and add green chilies.
- Add finely chopped fresh coriander leaves.
- Mix everything well using a large spoon, ensuring the spices and vegetables are well combined.
- Serving:
- Serve the chaat on a plate.
