Today, I’m going to make Kaju Masala Namkeen. For this recipe, I’ve taken 2 cups of semolina (sooji). I’ll be making the namak pare using semolina instead of wheat flour. Here’s what you’ll need:

  • 2 cups of semolina
  • 1/2 teaspoon chaat masala
  • 1/2 teaspoon red chili powder
  • 2-3 tablespoons ghee
  • 1 tablespoon wheat flour
  • Refined oil for frying

Instructions:

  1. Prepare the Semolina:
    • Take a mixer jar and add the semolina.
    • Add salt to taste.
    • Grind the semolina in the mixer until it becomes a fine powder.
    • Transfer the powdered semolina to a large bowl.
  2. Make the Dough:
    • Gradually add water to the semolina powder, just as you would when making wheat flour dough.
    • Mix it well, adding water little by little, until a smooth dough forms.
    • Add 1 teaspoon of refined oil to the dough and mix well.
    • Let the dough rest for 10-15 minutes to set properly.
  3. Prepare the Ghee Mixture:
    • In a small bowl, mix the ghee with the wheat flour.
    • Stir well to combine and set aside.
  4. Roll the Dough:
    • After the dough has rested, divide it into two equal parts.
    • Take one part and divide it further into three portions, rolling each portion into a ball.
    • Roll out each ball into a flat, round shape, similar to rolling out roti or paratha. The thickness should be slightly thicker than a roti.
  5. Layer the Dough:
    • Take one rolled dough and spread the ghee mixture evenly over it.
    • Place the second rolled dough on top and spread more ghee mixture.
    • Place the third rolled dough on top and roll out the layered dough to make it thinner.
  6. Cut and Shape:
    • Use a bottle cap or a similar round cutter to cut the rolled dough into cashew-shaped pieces.
    • Continue cutting until all the dough is used.
  7. Fry the Namkeen:
    • Heat refined oil in a pan for frying.
    • Once the oil is hot, fry the cut pieces until they turn golden brown on both sides.
    • Remove them from the oil and place them on a paper towel to drain excess oil.
  8. Season the Namkeen:
    • Sprinkle red chili powder and chaat masala over the fried pieces while they are still hot.
    • Mix well to coat evenly.
