Ingredients:

  • 500 grams of jackfruit (cut and cleaned)
  • 1/4 teaspoon salt (for boiling jackfruit)
  • 1/4 teaspoon turmeric (for boiling jackfruit)
  • 1 cup mustard oil
  • 2 bay leaves
  • 1 small piece of cinnamon
  • 1 large cardamom
  • 2 small cardamoms
  • 2 cloves
  • 1/2 teaspoon cumin seeds
  • 1 dried red chili
  • A pinch of asafoetida (hing)
  • 2 large onions (sliced)
  • 7-8 garlic cloves (crushed)
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon spicy red chili powder
  • 1 teaspoon garam masala
  • 1 teaspoon coriander powder
  • 1 teaspoon Kashmiri red chili powder
  • 1 teaspoon roasted cumin powder
  • Salt to taste
  • 2 large tomatoes (finely chopped)
  • 1-1.5 glasses of water
  • Fresh coriander (for garnish)

Method:

Boiling the Jackfruit:

  • Put the jackfruit in a pressure cooker and add enough water to submerge it.
  • Add 1/4 teaspoon salt and 1/4 teaspoon turmeric.
  • Cook it in the pressure cooker until three whistles.
  • Take out the boiled jackfruit and keep it in a bowl.

Frying the Jackfruit:

  • Heat 1 cup of mustard oil in a pan.
  • Once the oil is hot, add the boiled jackfruit and fry until golden brown.
  • Remove the fried jackfruit and keep it in a bowl.

Preparing the Spices:

  • In the same oil, add 2 bay leaves, a small piece of cinnamon, 1 large cardamom, 2 small cardamoms, 2 cloves, 1/2 teaspoon cumin seeds, and 1 dried red chili.
  • Lightly brown these spices and then add a pinch of asafoetida.
  • Add the sliced onions and fry on high heat until golden brown, stirring occasionally.
  • Add the crushed garlic cloves and mix well, frying them with the onions.
  • Add the ginger-garlic paste and fry for another 2 minutes.

Mixing the Spices:

  • Add 1 teaspoon spicy red chili powder, 1 teaspoon garam masala, 1 teaspoon coriander powder, 1 teaspoon Kashmiri red chili powder, 1 teaspoon roasted cumin powder, and salt to taste.
  • Add half a glass of water, mix, and fry the spices on medium heat for 5 minutes, stirring occasionally.

Adding the Tomatoes:

  • Add the finely chopped tomatoes and fry for another 5 minutes until the tomatoes are well cooked.
  • Add the fried jackfruit.
  • Add 1-1.5 glasses of water and mix well.

Cooking:

  • Cover the pan and let it cook on medium heat for 10 minutes.
  • After 10 minutes, uncover and add fresh coriander, mixing well.

Serving:

  • The hot jackfruit curry is ready. It looks delicious and tastes even better.
