Ingredients:
- 500 grams of jackfruit (cut and cleaned)
- 1/4 teaspoon salt (for boiling jackfruit)
- 1/4 teaspoon turmeric (for boiling jackfruit)
- 1 cup mustard oil
- 2 bay leaves
- 1 small piece of cinnamon
- 1 large cardamom
- 2 small cardamoms
- 2 cloves
- 1/2 teaspoon cumin seeds
- 1 dried red chili
- A pinch of asafoetida (hing)
- 2 large onions (sliced)
- 7-8 garlic cloves (crushed)
- 1 tablespoon ginger-garlic paste
- 1 teaspoon spicy red chili powder
- 1 teaspoon garam masala
- 1 teaspoon coriander powder
- 1 teaspoon Kashmiri red chili powder
- 1 teaspoon roasted cumin powder
- Salt to taste
- 2 large tomatoes (finely chopped)
- 1-1.5 glasses of water
- Fresh coriander (for garnish)
Method:
Boiling the Jackfruit:
- Put the jackfruit in a pressure cooker and add enough water to submerge it.
- Add 1/4 teaspoon salt and 1/4 teaspoon turmeric.
- Cook it in the pressure cooker until three whistles.
- Take out the boiled jackfruit and keep it in a bowl.
Frying the Jackfruit:
- Heat 1 cup of mustard oil in a pan.
- Once the oil is hot, add the boiled jackfruit and fry until golden brown.
- Remove the fried jackfruit and keep it in a bowl.
Preparing the Spices:
- In the same oil, add 2 bay leaves, a small piece of cinnamon, 1 large cardamom, 2 small cardamoms, 2 cloves, 1/2 teaspoon cumin seeds, and 1 dried red chili.
- Lightly brown these spices and then add a pinch of asafoetida.
- Add the sliced onions and fry on high heat until golden brown, stirring occasionally.
- Add the crushed garlic cloves and mix well, frying them with the onions.
- Add the ginger-garlic paste and fry for another 2 minutes.
Mixing the Spices:
- Add 1 teaspoon spicy red chili powder, 1 teaspoon garam masala, 1 teaspoon coriander powder, 1 teaspoon Kashmiri red chili powder, 1 teaspoon roasted cumin powder, and salt to taste.
- Add half a glass of water, mix, and fry the spices on medium heat for 5 minutes, stirring occasionally.
Adding the Tomatoes:
- Add the finely chopped tomatoes and fry for another 5 minutes until the tomatoes are well cooked.
- Add the fried jackfruit.
- Add 1-1.5 glasses of water and mix well.
Cooking:
- Cover the pan and let it cook on medium heat for 10 minutes.
- After 10 minutes, uncover and add fresh coriander, mixing well.
Serving:
- The hot jackfruit curry is ready. It looks delicious and tastes even better.
