Ingredients:

  • 1 packet mushrooms, washed and dried
  • 1 cup green peas
  • 3 tomatoes, chopped
  • 10-12 garlic cloves
  • 2 green chilies
  • 6 pieces of ginger
  • 2 pieces of cinnamon
  • 4-5 black peppercorns
  • 1 teaspoon cumin seeds
  • 4-5 cloves
  • 4 onions, finely chopped
  • 3 tablespoons mustard oil
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon Kashmiri red chili powder
  • 1 teaspoon garam masala
  • 1 glass of water
  • Salt to taste

Method:

1. Prepare the Mushrooms

First, wash and dry the mushrooms. Cut the large mushrooms into six pieces and the small mushrooms into two pieces.

2. Make the Masala Paste

In a mixer jar, add the chopped tomatoes, garlic cloves, green chilies, and ginger pieces. Blend to make a paste without adding water, as tomatoes already have moisture.

3. Fry the Mushrooms

Heat a pan with mustard oil. Once the oil is hot, add the chopped mushrooms and stir-fry them for 3-4 minutes. When they release some water, remove them from the pan and set aside on a plate.

4. Prepare the Spices

In the remaining oil, add the cinnamon, black peppercorns, cumin seeds, and cloves. Let them crackle.

5. Sauté the Onions

Add the finely chopped onions to the pan and sauté until they turn light brown.

6. Add the Spices

Lower the heat and add the turmeric powder, Kashmiri red chili powder, and garam masala. Mix well.

7. Add the Masala Paste

Now add the tomato, green chili, ginger, and garlic paste. Mix everything together and let it cook for a while. You can add salt at this stage if you prefer.

8. Cook the Masala

Cover the pan and let the masala cook on low flame for 5-6 minutes, stirring occasionally to prevent sticking.

9. Add Mushrooms and Peas

Once the masala is cooked and oil starts to separate, add the fried mushrooms and green peas. Mix well and cook for another 2-3 minutes.

10. Add Water and Salt

Add 1 glass of water and salt to taste. Adjust the water according to your desired consistency. Cover and cook on low flame for 7-8 minutes until the peas are cooked through.

11. Finish the Sabzi

The delicious matar and mushroom sabzi is now ready. Turn off the heat and transfer the sabzi to a serving bowl.
