Ingredients:
- 8 eggs
- 4-5 cloves of garlic
- A piece of ginger
- 1 tomato, finely chopped
- A handful of coriander leaves
- 1 cup of finely chopped onion
- 50 grams of peas
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon coriander powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon garam masala
- 1/2 teaspoon Kashmiri red chili powder
- 1/2 teaspoon dried fenugreek leaves
- 1/4 teaspoon cumin seeds
- 1/2 teaspoon salt
- 2 tablespoons butter
Method:
- Boiling the Eggs:
- Boil the eggs by placing them in a pressure cooker with 1/4 teaspoon of salt and 2 cups of water.
- Cook until you hear one whistle on high heat.
- Once done, remove the eggs, peel them, and cut them in half.
- Preparing the Paste:
- Blend garlic, ginger, tomato, and coriander leaves in a mixer to make a paste.
- Frying the Eggs:
- Heat a tawa (griddle) and add some butter.
- Place the boiled eggs on the tawa, cut side down, and fry until they turn golden brown.
- Remove the eggs from the tawa and set them aside.
- Making the Masala:
- Add more butter to the tawa.
- Add cumin seeds and let them splutter.
- Add the prepared paste and cook for a few minutes.
- Add turmeric powder, coriander powder, cumin powder, Kashmiri red chili powder, garam masala, dried fenugreek leaves, and salt.
- Mix well and cook for 2-3 minutes.
- Combining Everything:
- Add the fried eggs and peas to the masala mixture.
- Mix everything well and cook for another 2 minutes to allow the flavors to blend.
- Serving:
- Garnish with fresh coriander leaves.
- Serve hot with roti, paratha, naan, or rice.
